- 1 Soignon goat cheese Pyramid Plain, 150g
- 4 large slices of farmhouse bread
- 12 shrimp
- 12 baby green leaves
- 1/2 lemon (zest and juice)
Salt and 5 peppercorn blend
Olive oil
- 200 g frozen peas
- 20 g butter
- 1 tsp sugar
- 100 ml water
Salt, freshly ground pepper
- 4 chopped mint leaves

Step 1
Heat a frying pan over low heat with the butter, sugar, and water.
Step 2
Add the peas, salt, and pepper and reduce until the water evaporates.
Step 3
Stir in the mint and set aside.
Step 4
Peel and clean the shrimp.
Step 5
Mix the Soignon fresh goat cheese with the lemon juice and a drizzle of olive oil. Toast the slices of farmhouse bread, spread a generous layer of the lemon and cheese mix on top.
Step 6
Arrange the lettuce on each slice of bread, then add the peas and shrimp.
Step 7
Sprinkle with lemon zest and season with salt and pepper before serving.
