  • For the pancakes:

  • 2 eggs
  • 500 ml 1% or 2% milk
  • 125 g flour
  • 1 tsp baking powder or baking soda
  • 4 tbsp sugar
  • 1 pinch of salt
  • Butter or oil for cooking

  • For the cheese:

  • 1 container of plain goat or sheep milk fromage blanc
  • 1 Soignon Spreadable goat cheese Pyramid Plain, 150g
  • A few strawberries and blueberries

  • A little bit of jam

  • Step 1

    In a large bowl, mix: flour, baking soda/powder, sugar and a pinch of salt.

  • Step 2

    In another bowl, mix the 2 egg yolks with the milk then pour into the first bowl. Make sure to keep mixing as you do this. You should get a thick pancake batter texture. Let it rest 15 to 30 minutes.

  • Step 3

    Beat the egg whites to stiff peaks and fold them into the mixture gently (this is the secret behind super fluffy pancakes).

  • Step 4

    Cook in a small, hot, buttered pan for 1 minute on each side.

  • Step 5

    The edges should be golden. You'll know it’s time to flip the pancakes when little bubbles form on top!

  • Step 6

    In a bowl, mix a few spoonfuls of fromage blanc with 2 spoonfuls of Soignon Spreadable goat cheese Pyramid Plain and add a few blueberries.
