- 1 cucumber
- 1 Soignon Whipped goat cheese plain 140g
- 6 mint leaves
- 4 sun-dried tomatoes
- 8 black olives
- 1 tbsp pine nuts

Step 1
Wash the cucumber and halve it lengthwise.
Step 2
Deseed it with a small spoon.
Step 3
Chop the mint, tomatoes, and olives and mix together with the pine nuts.
Step 4
Fill the cucumber boats with the Soignon Whipped goat cheese and top with the olive mixture.
