Roasted apples with goat cheese and smoked bacon

Ingredients

  • 1 pack Soignon Goat cheese with bacon wrapped 4x25g
  • 4 small apples
  • 4 slices gingerbread
  • 4 sprigs thyme
  • 12 pine nuts
  • 2 bunches red currant
  • 1 tbsp honey
  • 1 pinch hot paprika or cayenne

  • Step 1

    Preheat the oven to 210°C. Wash the apples, cut off the tops and carefully hollow them out.

  • Step 2

    Put the apple shells on a baking tray. Mix the honey, pine nuts, thyme, red currant, and hot paprika and fill the apples with this mixture. Bake in the oven for about 10 minutes.

  • Step 3

    After 10 minutes, remove from the oven and place a Soignon Goat cheese with bacon wrapped on top of each apple. Bake for a further 5 minutes. Meanwhile, toast the slices of gingerbread.

  • Step 4

    Remove the baked apples from the oven and serve hot, with a mesclun salad and balsamic vinaigrette.
